11 Healthy Vegan Recipes for Potatoes
You may not think of potatoes as synonymous with healthy eating, but potatoes are (almost shockingly) good for you. Want to up your potato game? Try these delicious vegan recipes for potatoes!
Potatoes get a bad rep when it comes to healthy eating, and a lot of it is undeserved. Yes, they do contain a lot of carbs, but when it comes to your health, carbs are not the enemy. Refined carbs are undeniably bad for your health, but a whole potato with the skin on is packed with fiber, vitamins, minerals and even a healthy dose of protein. Let’s stop equating potatoes with food like white bread.
Preparation, though, can make potatoes unhealthy. Are you removing and discarding that nutrient-rich skin? Are you slathering it in butter and cheese and sour cream or deep frying it? You can just as easily ruin broccoli, if you treat it that way. No need to blame that innocent potato!

This is a one-pot, slow cooker meal that’s hearty and healthy. A generous sprinkle of dill brings out the flavor in the cabbage steaks and in the crock pot-roasted rainbow potatoes.
3. Vegan Potatoes au Gratin with Collard Greens
Conventional potatoes au gratin are all about the cheese and butter, but this vegan version replaces the dairy with rich, cheesy cashew cream instead. Add a layer of sautéed collards, and you have a cozy side dish that’s healthy without tasting healthy.
